They have stripped several reasonably sized branches, what should I do to prevent it from getting an infection?

So your once beautiful tree is dying and your boys?

Ring a garden centre, they should be able to give you some advice

In the past I have smeared vaseline over the raw areas to keep out insects & fungal spores - seems to have worked. And then the sap builds up underneath & seals off the site.

I have seen ring barked trees grafted with bark strips in between the top and bottom of damaged area and they do not have to cover the whole area. Bit late for yours tho. Interesting to do.
