I have mine still in the ground! pulled one Elephant one out but it feels like it has no cloves as such just a big bulb normal! I have let them poke up their seed heads and then have pulled those off so they have not flowered.

Congrats on the great garlic, mine are terrible this season, pulled a couple up the other day and they each had two miserly cloves.

I've grown these before too, bitfreakish aren't they! They are great roasted though, or they can be replanted for massive heads next year. Apparently they are a bit trendy now too. http://sundaynitedinner.com/trader-joes-one-clove-per-head-garlic/
