Best cooking apple varieties

Bramley and Ballarat ! I've seen them both here in Akl occasionally in supermarkets but not often at all (probably only twice in 5 years). When I see them I grab several dozen as I adore them for cooking. They are the best IMHO. (And also for eating if you like sour. I can't stand sweet apples).

In the UK I also remember a variety called Yorkshire Greening which was sour and perfect.

Some of the Pippins are ok for cooking - a few varieties are here.

I envy people who can grow apples. Too windy on my coastal property.

Ok, so it seems the best cookers fall into a sour variety ? then when cooking in pies &c do you have to sweeten the cooked apple to be palatable ?
