Why are you transplanting now or are you doing divisions. I would remove the leaves, they will probably die anyway and it is less for the the plant to try and sustain

They should be divided up when dormant.

I dug a clump from a friends house big leafy things, planted them but they drooped so I have cut the leaves off and hoping they come back ok

As long as you water them and have them in at least semi shade in a moistish position they should do just fine,

This! Wrong time of the year to transplant, but they will probably be fine with a little TLC.
