Finishing for a wooden kitchen bench

What products would you use for finishing a wooden kitchen bench top? Would oil or polyurethane be best? How many coats and how often to retreat/top up? Is a pale wood and I'd like to keep it as natural looking as possible (no high gloss finish). Thanks.

Polyurethane or lacquer is more stain resistant. (You can use semi gloss) but oil looks nicer imo. It just depends on what sort of upkeep you are prepared to do. Oil also darkens it a bit

Moisture cure, from Wattyl. glossy & hard wearing ideal for wet area.

Moisture cure (Polythane) from Resene or Resene Uracryl Clear (2 pack available in low sheen, semi gloss and full gloss)
