I have bamboo next door. It is encroaching from under the fence. Every time I see new growth it gets lopped off. I think the chemical weapon is available, it was on a previous bamboo thread, but I don't use those.

I cut the bamboo just below a partition and pour neat Roundup in.

Get a slammer tool, I think they were originally designed for removing bambooo and do a great job of it. Cut it low and use the slammer to remove blocks of roots out.

Bamboo is a grass, spray with glyphsate and add a surfactant, spray entire plant and it will die, you do need to keep spraying once or twice a year to control any regrowth but it will eventually stop. The key is total coverage.
