If I want to lay a laminate flooring over an existing kitchen floor, am I better to remove the kitchen and do the whole floor, or do the flooring around the cupboards.
Pro/cons to both approaches?

You remove the kitchen units only if the floor is rotten and or if the units need to be replaced. Otherwise you suitably prepare the floor to attach the laminate to.

What's going to hold the laminate down?

the click together laminate flooring is a "floating" floor so not fixed down, skirting and toekicks come off and go back on after flooring and inderlay is laid
