For the draw wire, use a multi strand stainless steel wire.
Nothing else will survive after a couple of years

the more the better and use heavy wires 1.5m2 only for lights rest 2.5 and a heavy supply line , i wired all my places my self and just had things inspected , personally i would run all wiring in conduits so the rats dont have it easy to chew on.
All the wiring i replaced in the house here in taumarunui is in conduits and i put a ton of rat poison everywhere after
replaced loads of chewd wires no wonder houses go up in flasmmes , and yea i got no insurance so dont want it to burn down.
afterwards if i was you i would line the garage walls , hope you can insulate it?

Put some empty conduits into the trench for future.
Second the ethernet cable, phone cable, alarm cable etc. Cable is cheap at this stage.
I would put a power opener on the door - handy when you have your hands full and walking out to the shed. At this stage I would put the power point in anyway, you can always use it for a drop cord.
I have a radiant heater over the bench area for winter since I had a couple from the old factory.
Powerpoint in the middle of the roof for a drop cord?
Powerpoint at high level for an air compressor up in the roof trusses (to keep it out of the way?
Outside power point for working outside, cleaning the hose end shed etc
Look at the circuit breakers you have for welders - my (3ph) MCBs at the old place used to pop sometimes when switched on from the inrush current, but were ok once it was running. I was told it was the curve (class C vs Class D?) of the breaker. I never got around to changing them before we moved.

also if you have a electrition do it
Make sure the friggen garage is absolute empty or all your crap in the middle so they dont have to stop working to move crap time is money everxy minute costs loads of money for payment on trades person. its not like cars where we cant charge people to move there crap out of the boot of a car so you can work
electrition will charge you for the time to move junk at standard full rate.

Not mentioned but I would put a socket on the ceiling to power the laser car parking positioner
