What is the best/safest oil to use please on a wooden cheese board? Or do I leave it plain. Was a homemade gift. Does the type of timber make a difference? Could find out if need be.

You need an oil that's non-tainting. Just rub in some canola oil or suchlike cooking oil.

Leave it natural, or use an oil (if you really want to) that doesn't go rancid after a while !

I've used 'wooden work surface wax /from Stevens I think on my boards and kitchen wooden bench

Bees wax is food safe. And a good sealer.

You can make a good cutting board finish from food grade mineral oil and beeswax. Actually you can also use either of those alone, but a blend of them gives a waxy paste that's easy to apply, leaves a nice wax finish, and wont go rancid like some vege oils can.

That is what I do, and a scrub now and again, I have this wonderful kauri fruit bowl, it get scrubbed and oiled, looks great.
