I think it's a David Austin . possibly Ellen, if not it could be a heritage rose. Perhaps if you google images of Austin roses, it may help

It is hard to see exactly what colour it is - given the different settings of each persons computer - but to my eye, it looks to be a pale ivory blushed apricot. Looking at the form, I'm wondering at the possibility of Sweet Juliet (an Austin Rose, of course). Perhaps if you could confirm the colour in words, would be helpful.

No. AD has denser petals & is far more apricot & salmon in colour. OP's rose looks more mono toned, tending toward parchment on my monitor.
ETA, Op do you have a rose nursery that you could take a bloom into? Or perhaps email Wairere Nursery with pics of bloom & plant? Would love to know what you have, it is gorgeous. Is it well scented? I feel like I have seen it & should know what it is!
