Hi there clever mushroomiers! These chaps popped up on my lawn - any idea what they are? Assumed best not to eat them lol, but curious anyway. I've never seen mushrooms with a gill-like cap before.
Ink caps are edible when young and white, before they develop “ink” I have collected them often during my tramping years. Must be cooked as soon as possible.

Just wondering lilyfield, why they "Must be cooked as soon as possible." Do they just taste disgusting if you wait too long? Or. ?
Schnauzer - any cooking suggestions? I gathered some 'normal' field mushrooms and did them with butter and garlic and they were splendid :)

Okay, just read more of the wiki page - "cooking inactivates the enzymes that cause autodigestion or deliquescence—a process that can begin as soon as one hour after collection." Crikey that sounds horrible ha ha

Cook soon or they will turn purple and mushy . Also best used as’filler’ with other more tasty fungi

What on earth are you on about, lakeview?! I've been collecting edible mushrooms, of which we have some good species in NZ, for decades. The Inkcaps are a great addition to dishes and I'll be gathering some from a favourite spot tomorrow.

I fondly remember the rugby ball sized puff balls we found in the S.I. Cooked them sliced like steak on the barbie. I know at least 10 varieties of eatable fungi in N Z

Why would I need luck? Those of us who collect edible fungi know how to identify them. There are some excellent FB groups for people to join, too. Some of us are already getting this season's Porcini from certain park areas. Such a prize and would cost a fortune if you ever found them for sale here!

I had a look at that, mostly a page of people trying to work out if something is poisonous or not. I am sorry but I wouldn’t rely on the ‘knowledge’ of strangers in determining whether I should eat a potentially fatal mushroom or not! Omg!
