Not quite. The "air" is the same, oxygen is oxygen. Just more particles are in it.

It is fine to turn it down, as it will be designed to not smoke too much when you turn it down, as long as you don't modify it.
You may well want get it cranking hard, then when it is nice and hot to restrict the airflow a little to stop it going so berserk.

Yes in NZ you can no longer bank them. The rest of the world however went the other way, because it does a secondary burn which prevents excess soke. NZ thinks it causes it.

When you bank the fire, you lower the burning temperature, which creates incomplete combustion. This is why log burners that regularly get used for overnight burns tend to get a build up of soot.
