Looking for someone in the Aucks area who can plane down a roughsawn slab of red cedar 600x1800x60mm to make a benchtop. Any recommendations?.

Make yourself a "router bridge".

A big woodworking shop may be able to do it for you, as long as you can guarentee, on pain of death, that the slab does not have any nails, buried bits of fencing wire etc etc. If your slab puts a “gap” in their very very very expensive planner blades, you will complete ruin their day, if not week !

Cedar is pretty soft for a benchtop.
